Green Bean and Potato Balls with Sesame

Green bean and potato balls with sesame are a delicious and healthy dish that can be easily prepared. Here is a recipe you can follow:

Ingredients

  • 400 g of green beans
  • 300 g of potatoes
  • 50 g of sesame seeds
  • 1 egg (optional, can be omitted for a vegan version)
  • 2 tablespoons of grated Parmesan cheese (optional, for a vegan version you can use grated vegan cheese or omit it)
  • Salt and pepper to taste
  • Breadcrumbs, as needed to get the right consistency
  • Extra virgin olive oil for frying or baking

Preparation

  1. Clean the green beans by cutting away the ends and boil them in salted water until they are tender. Drain and let them cool.

  2. Boil the potatoes in salted water until they are soft. Drain them, peel them, and mash them with a potato masher or a fork.

  3. In a large bowl, mix the chopped green beans, mashed potatoes, sesame seeds, egg, grated cheese, salt, and pepper until you get a homogeneous mixture.

  4. Add breadcrumbs as necessary to make the mixture firm enough to form into balls.

  5. Shape the mixture into balls and flatten them slightly to form balls.

  6. You can choose to either fry or bake them. To fry, heat plenty of oil in a pan and cook the balls until they are golden on both sides. For a lighter version, place them on a baking tray lined with parchment paper and bake in a preheated oven at 180 °C until golden.

  7. Serve them warm or at room temperature, as you prefer.

Note:

If you decide to fry them, you might want to roll the balls in breadcrumbs before frying to achieve a crispier crust. In addition to being a delicious dish, green bean and potato balls are also versatile: you can add herbs like parsley or basil for a fresh touch, or spices like curry or paprika to give a more decided flavor.
