Greek Yogurt and Lemon Cake
17/11/2023The Greek Yogurt and Lemon Cake is a delicious and fresh dessert, perfect for concluding a meal or for an afternoon break. Here is the recipe:
Ingredients
- 250 g of Greek yogurt
- Grated zest of 2 organic lemons
- 3 eggs
- 100 ml of seed oil
- 200 g of caster sugar
- 300 g of type 00 flour
- 16 g of baking powder for cakes
- A pinch of salt
- Butter and flour to grease and flour the cake tin
Optional for garnishing:
- Powdered sugar
- Thin slices of lemon

Preheat the oven to 180 degrees C and grease and flour a cake tin (preferably with a springform to facilitate unmolding).

In a bowl, combine the eggs and sugar and beat with an electric whisk or mixer until you get a light and frothy mixture.

Add the grated lemon zest and seed oil, continuing to mix.

Incorporate the Greek yogurt into the mixture of eggs, sugar, lemon zest, and oil, stir well to obtain a homogeneous mixture.

Separately, sift the flour with the baking powder and a pinch of salt.

Add the dry ingredients to the liquid mixture, mixing gently until you get a smooth and lump-free batter.

Pour the batter into the prepared tin and level it with a spatula.

Bake in the central part of the oven for about 35-40 minutes, or until a skewer inserted into the center of the cake comes out clean.

Remove the cake from the oven, let it cool for a few minutes, then gently unmold it onto a wire rack to complete the cooling.

When it’s completely cool, you may dust it with powdered sugar and decorate with thin slices of lemon, if desired.
