Greek-Style Eggs

Greek-style eggs are a simple and tasty dish that combines typical Mediterranean flavors of Greece. Here is the recipe to prepare Greek-style eggs with a small Italian twist.

Ingredients

  • 4 large eggs
  • 1 small onion, finely chopped
  • 2 ripe tomatoes, peeled and chopped (or a cup of tomato puree)
  • 1 green pepper, cut into strips
  • 100 g of feta cheese, crumbled
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • A pinch of oregano or chive (for a more Italian touch in seasoning)
  • Black olives pitted, for garnish (optional)

Preparation

  1. In a fairly large pan, heat the extra virgin olive oil and add the chopped onion. Let it wilt over medium heat until it becomes transparent.
  2. Add the chopped tomatoes and green pepper strips, then cook for about 10 minutes until the pepper softens and the sauce begins to reduce.
  3. Season with salt, pepper, and a pinch of oregano or chive to add a more Italian touch.
  4. Make four small indentations in the sauce and break an egg into each one. Cover the pan with a lid and let the eggs cook to the desired degree of doneness (for Greek-style eggs, the yolk should remain slightly runny).
  5. Once the eggs are cooked, sprinkle the crumbled feta on top and decorate with black olives if you wish.
  6. Serve immediately, accompanying the dish with crunchy bread or Greek pita to do the famous “scarpetta”.

This dish has the typical flavors of Greek cuisine but is flavored slightly differently, with a nod to Italian tastes thanks to the use of oregano or chive instead of the more common Greek spices. The crumbled feta adds that creaminess and salty touch that pairs very well with the sweetness of the tomato and the light taste of the pepper.
