Greek-Style Farro Salad

Ingredients

  • 200 g of pearled farro
  • 150 g of cherry tomatoes
  • 1 cucumber
  • 1 red bell pepper
  • 100 g of feta cheese
  • Pitted black olives
  • Dried oregano
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Vinegar (wine or balsamic)
  • Optionally a bit of red onion

Preparation

  1. Start by cooking the farro in plenty of salted water following the instructions on the package, usually about 20-30 minutes are needed. Once cooked, drain it and let it cool down.
  2. In the meantime, wash and cut the cherry tomatoes in halves, the cucumber into cubes, the bell pepper into strips, and the onion into thin slices (if you are using it).
  3. Put the farro in a large salad bowl and add the chopped vegetables, olives, and crumbled feta.
  4. Dress with extra virgin olive oil, vinegar, oregano, salt, and pepper to taste. Mix well to flavor all the ingredients.
  5. Let it rest in the fridge for at least 30 minutes before serving to blend the flavors.
