Greek-Style Farro Salad

Ingredients
- 200 g of pearled farro
- 150 g of cherry tomatoes
- 1 cucumber
- 1 red bell pepper
- 100 g of feta cheese
- Pitted black olives
- Dried oregano
- Salt and pepper to taste
- Extra virgin olive oil
- Vinegar (wine or balsamic)
- Optionally a bit of red onion
Preparation
- Start by cooking the farro in plenty of salted water following the instructions on the package, usually about 20-30 minutes are needed. Once cooked, drain it and let it cool down.
- In the meantime, wash and cut the cherry tomatoes in halves, the cucumber into cubes, the bell pepper into strips, and the onion into thin slices (if you are using it).
- Put the farro in a large salad bowl and add the chopped vegetables, olives, and crumbled feta.
- Dress with extra virgin olive oil, vinegar, oregano, salt, and pepper to taste. Mix well to flavor all the ingredients.
- Let it rest in the fridge for at least 30 minutes before serving to blend the flavors.
