Greek-Style Frittata

The Greek-Style Frittata (also known as “frisada”) is a Mediterranean variant of the classic egg dish. As I guide you through the preparation of the recipe, I’ll add an Italian touch to make it even tastier. Here’s how to prepare it:

Ingredients

  • 6 eggs
  • 1 medium red onion, thinly sliced
  • 2 tablespoons of extra virgin olive oil
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 100 g black or kalamata olives, pitted and halved
  • 150 g Greek feta, crumbled
  • 2 tablespoons of milk
  • Salt and pepper to taste
  • A pinch of chopped dry or fresh oregano
  • A bunch of fresh parsley, chopped (optional, but very Italian)

Preparation

  1. In a large skillet, heat the olive oil over medium heat. Add the onion and sauté until it becomes translucent. Then add the strips of bell pepper and cook for a few minutes until they start to soften.

  2. In a bowl, beat the eggs with milk, salt, pepper, and a pinch of oregano. This gives a classic Mediterranean flavor that blends well with the other ingredients.

  3. Add the black olives to the skillet and distribute them evenly.

  4. Pour the beaten egg mixture into the skillet, cover with a lid, and let cook over medium-low heat for about 5-7 minutes or until the bottom has set while the top is still slightly liquid.

  5. Sprinkle the crumbled feta over the surface and replace the lid. Let it cook for another 2-3 minutes or until the eggs are fully set and the feta begins to melt slightly.

  6. For a final touch, scatter the chopped fresh parsley over the frittata for a fresh Italian accent.

  7. Turn off the heat and let the frittata rest for a couple of minutes before cutting it into slices and serving.

Curiosity

The frittata is a very versatile dish in Mediterranean and Italian cuisines. Each country adds its own touch of flavor with aromatic herbs or preserves like olives and cheeses. The Greek-Style Frittata is a celebration of the flavors of Hellas, with the saltiness of the feta and the distinct aroma of kalamata olives. In Italy, you might find variations with added sun-dried tomatoes or aromatic herbs such as basil or mint for an even richer flavor profile.

Remember that in frittatas, you can also add leftover vegetables or other ingredients you have at home to experiment with new flavors. Enjoy your meal!
