Mouthwatering Bell Pepper Terrine
17/11/2023The bell pepper terrine is a versatile and colorful dish, excellent for serving as an appetizer or side dish. Here is the recipe to prepare a mouthwatering bell pepper terrine.
Ingredients
- 3 bell peppers of different colors (red, yellow, green)
- 200 g of spreadable fresh cheese (like Philadelphia)
- 100 g of goat cheese
- 2 tablespoons of milk
- 2 cloves of garlic
- A few leaves of fresh basil
- Extra virgin olive oil
- Salt
- Pepper
Preparation
- Start by washing the bell peppers, then cut them in half, removing the seeds and the white inner parts. Arrange them on a baking tray with the skin facing up and roast in a preheated oven at 200 °C until the skin is blistered and charred.
- Once ready, take the bell peppers out of the oven and immediately cover them with a damp cloth or plastic wrap, letting them rest for a few minutes: the steam that forms will make peeling them easier.
- Peeling the bell peppers should now be easier. After removing the skin, cut them into wide strips and set aside.
- Take a terrine or loaf pan (or a similar mold you prefer) and line it with clear film; this will help to unmold the terrine more easily once it’s ready.
- Prepare the cheese mixture by mixing together the goat cheese, spreadable cheese, and a couple of tablespoons of milk. Add salt and pepper to taste.
- Add the finely chopped garlic and the torn basil leaves, mixing well.
- Begin to assemble the terrine by alternating a layer of bell peppers with a layer of cheese cream until the mold is filled.
- Close the terrine with the film and place it in the fridge for at least 3-4 hours, better if overnight.
- To serve, invert the mold onto a serving plate and remove the film.
- Garnish as desired with basil leaves or other herbs and serve.
This terrine is also excellent if prepared a day ahead and left to rest in the fridge, so that all the flavors can meld together well. It can be served with crusty bread or fresh vegetables for a light and flavorful appetizer.
