Squid rings au gratin

Squid rings au gratin are a delicious and easy dish to prepare. Here’s how to do it:

Ingredients

  • 500 g of squid rings
  • 100 g of breadcrumbs
  • 2 cloves of garlic
  • Parsley to taste
  • 50 g of grated Parmesan cheese (or another aged cheese of your liking)
  • 4 tablespoons of extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • Lemon (to serve)

Preparation

  1. Preheat the oven to 200 °C (°C).
  2. Clean the squid rings well, ensuring they are free of internal residues and then pat them dry with kitchen paper.
  3. In a bowl, mix the breadcrumbs with finely chopped garlic, chopped parsley, grated cheese, salt, and pepper.
  4. Lay the squid rings out on a baking sheet lined with parchment paper, trying not to overlap them.
  5. Drizzle the squid rings with a stream of extra virgin olive oil.
  6. Sprinkle each squid ring with the breadcrumb mixture, pressing lightly to make sure the mix sticks well.
  7. Bake the rings for about 15-20 minutes or until they are au gratin and crispy on the surface.
  8. Serve the baked squid rings hot, with lemon wedges to squeeze as desired.

Curiosity

In some variants of this recipe, aromatic herbs such as thyme or rosemary can be added to the breadcrumb mix to enrich the flavor. Moreover, in Italy, it is common to add a touch of lemon not only at the end of cooking but also in the gratin mix, to give a fresh note to the dish.
