Gratin Chicken Strips and Peppers

Ingredients
- 400 g of chicken breast
- 2 peppers (1 red and 1 yellow to add color to the dish)
- 150 g of grated cheese (such as Parmesan or Pecorino)
- 1 clove of garlic
- Extra virgin olive oil
- Salt and pepper, to taste
- Oregano or aromatic herbs to taste
- Breadcrumbs, to taste (optional for a crispier effect)
Preparation
- Start by washing and cutting the peppers into strips or small squares, as you prefer.
- In a large pan, heat two tablespoons of oil and lightly fry the peeled garlic clove.
- Add the peppers, salt and pepper them, and let them cook over medium-low heat with the lid on until they are soft enough, about 15-20 minutes. If you wish, you can add a little water or vegetable broth to keep them from sticking.
- Meanwhile, cut the chicken breast into strips, season with salt, pepper, and a drizzle of oil.
- When the peppers are ready, transfer them to an oven-safe dish and add the raw chicken pieces on top.
- Sprinkle the entire surface with the grated cheese and, if you desire, with some breadcrumbs for an even crispier gratin.
- Bake the peppers and chicken in a preheated oven at 200 °C (390 °F) for 15-20 minutes or until the surface is golden brown and the peppers are au gratin.
- Once cooked, serve the gratin chicken strips and peppers hot, perhaps sprinkled with oregano or your favorite aromatic herbs for an extra aroma.
This dish can be served with a side of white rice or a fresh salad.
