Gratinated Squid and Prawns with Vegetables

Ingredients

  • 400 g of cleaned squid
  • 200 g of peeled prawns
  • 1 zucchini
  • 1 red pepper
  • 1 yellow pepper
  • 1 small onion
  • 2 cloves of garlic
  • Breadcrumbs as needed
  • grated Parmesan cheese as needed

  • Extra virgin olive oil as needed
  • Salt and pepper as needed

Preparation

  1. Prepare the vegetables: wash and cut the peppers and zucchini into strips, and finely slice the onion.
  2. In a pan, heat a drizzle of oil and sauté the onion and garlic until they become transparent.
  3. Add the peppers and zucchini and cook for about 10-15 minutes, until the vegetables are tender but still crunchy. Season with salt and pepper to taste.
  4. Meanwhile, in a bowl, mix the breadcrumbs with the Parmesan, chopped parsley, salt, and pepper.
  5. Clean the squid if they aren’t already and cut them into rings or leave them whole, depending on your preference.
  6. In a non-stick pan, cook the squid and prawns with a drizzle of oil and a pinch of salt for a few minutes until they turn golden.
  7. Preheat the oven to grill mode.
  8. In an oven dish, distribute the cooked vegetables, place the squid and prawns on top, and sprinkle everything with the breadcrumb and Parmesan mixture.
  9. Grill in the oven for a few minutes, until the breadcrumbs are golden brown and crispy.
  10. Serve immediately, while hot.
