Ingredients
- 400 g of cleaned squid
- 200 g of peeled prawns
- 1 zucchini
- 1 red pepper
- 1 yellow pepper
- 1 small onion
- 2 cloves of garlic
- Breadcrumbs as needed
- grated Parmesan cheese as needed
- chopped parsley as needed
- Extra virgin olive oil as needed
- Salt and pepper as needed
Preparation
- Prepare the vegetables: wash and cut the peppers and zucchini into strips, and finely slice the onion.
- In a pan, heat a drizzle of oil and sauté the onion and garlic until they become transparent.
- Add the peppers and zucchini and cook for about 10-15 minutes, until the vegetables are tender but still crunchy. Season with salt and pepper to taste.
- Meanwhile, in a bowl, mix the breadcrumbs with the Parmesan, chopped parsley, salt, and pepper.
- Clean the squid if they aren’t already and cut them into rings or leave them whole, depending on your preference.
- In a non-stick pan, cook the squid and prawns with a drizzle of oil and a pinch of salt for a few minutes until they turn golden.
- Preheat the oven to grill mode.
- In an oven dish, distribute the cooked vegetables, place the squid and prawns on top, and sprinkle everything with the breadcrumb and Parmesan mixture.
- Grill in the oven for a few minutes, until the breadcrumbs are golden brown and crispy.
- Serve immediately, while hot.
