Grandma's Cookies

Here is the traditional recipe for grandma’s cookies, perfect to accompany tea or coffee, with a local touch that makes them irresistible.

Ingredients

  • 500g of all-purpose flour
  • 200g of granulated sugar
  • 200g of butter at room temperature
  • 2 whole eggs
  • 1 egg yolk (for brushing)
  • 1 sachet of baking powder
  • Grated zest of 1 lemon
  • 1 pinch of salt
  • Icing sugar (optional, for decoration)

Preparation

  1. In a large bowl, sift the flour with the baking powder.
  2. Add the granulated sugar, pinch of salt, and lemon zest, mixing the dry ingredients.
  3. Create a well in the center of the dry ingredients and add the whole eggs and the softened butter, cut into pieces.
  4. Start kneading with your hands until the dough becomes smooth and even. If it is too dry, a tablespoon of milk can be added to help it bind.
  5. Form a ball with the dough, cover with cling film, and let it rest in the refrigerator for at least 30 minutes.
  6. After the resting time, preheat the oven to 180 °C.
  7. Take the dough and roll it out on a floured surface to a thickness of about 5mm.
  8. Use cookie cutters to cut out the cookies and transfer them onto a baking sheet lined with parchment paper.
  9. Brush the surface of the cookies with the beaten egg yolk to give them a golden and shiny appearance once baked.
  10. Bake the cookies in the oven for about 15-20 minutes until they are golden brown.
  11. Remove the cookies from the oven and let them cool completely on a wire rack before dusting them with icing sugar if desired.
