Gorgonzola Flan

Ingredients

  • 150 g of Gorgonzola cheese
  • 200 ml of fresh cream
  • 2 whole eggs
  • 2 egg yolks
  • Salt to taste
  • Pepper to taste
  • Butter for greasing the molds
  • Breadcrumbs for sprinkling the molds

Preparation

  1. Preheat the oven to 180°C.
  2. Grease the molds and sprinkle them with breadcrumbs, making sure to cover all the inner surfaces. This process will help the flan not to stick and to come out more easily after baking.
  3. Cut the Gorgonzola into small pieces and place it in a bowl together with the cream. Blend with a hand whisk until you obtain a smooth mixture.
  4. In another bowl, beat the whole eggs with the yolks, add a pinch of salt and pepper.
  5. Combine the egg mixture with the Gorgonzola and cream mixture, stirring gently to avoid incorporating too much air.
  6. Pour the mixture into the prepared molds, leaving a little space from the edge to allow the flan to puff up during cooking.
  7. Bake in a bain-marie in the oven for about 25-30 minutes. To create the bain-marie, place the molds in a baking dish and fill with hot water up to the middle of the molds.
  8. Check the baking by inserting a toothpick in the center: if it comes out clean, the flan is ready.
  9. Remove from the oven and let rest for a few minutes before gently unmolding onto individual plates.
