Gorgonzola Biscuits
17/11/2023Gorgonzola biscuits are a tasty idea for a different kind of aperitif or appetizer. Here is a simple recipe you can follow:
Ingredients
- 150 g of type 00 flour
- 100 g of mild gorgonzola cheese
- 50 g of butter at room temperature
- 1 egg
- 1 teaspoon of baking powder
- Salt to taste
- Black pepper to taste (optional)
- Roughly chopped walnuts or pistachios for garnish (optional)
If you do not have some of these ingredients, I could suggest alternatives, or we can omit them if they are not essential to the recipe.
Preparation
- If the butter is not already soft, leave it out of the refrigerator until it reaches room temperature.
- In a bowl, combine the gorgonzola and butter and work them together until you have a smooth mixture.
- Add the egg and continue to mix until it is well incorporated into the mixture.
- Sift the flour with the baking powder and gradually incorporate it into the mixture along with a pinch of salt and, if you like, a grind of black pepper.
- Work the dough until you have a homogeneous ball. If the mixture is too sticky, you can add a little more flour.
- Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes. This will make it easier to roll out and cut out the biscuits.
- Preheat the oven to 180 °C and prepare a baking sheet lined with parchment paper.
- Roll out the dough on a lightly floured surface until it is about 5 mm thick.
- Cut out the biscuits using a cutter of your choice.
- Place the biscuits on the previously prepared baking sheet and, if you wish, garnish each biscuit with a piece of walnut or pistachio.
- Bake the biscuits for about 15-20 minutes or until golden brown.
- Remove the biscuits from the oven and let them cool on a wire rack.
Serve the gorgonzola biscuits as an aperitif or accompany them with a glass of sparkling white wine.
