Golden milk gelato
17/11/2023The golden milk gelato is a deliciously fresh and sweet reinterpretation of the traditional golden milk, an Indian-origin beverage known for its anti-inflammatory and antioxidant properties thanks to turmeric, the main spice in this preparation.
Ingredients
- 400 ml of whole milk
- 200 ml of fresh cream
- 100 g of sugar
- 2 tablespoons of honey
- 2 teaspoons of turmeric powder
- 1 teaspoon of cinnamon powder
- 1 small piece of grated fresh ginger (about 1 cm)
- A pinch of ground black pepper (to increase turmeric absorption)
- 1 pinch of salt
Preparation
- In a medium saucepan, mix the milk with the sugar, honey, and grated piece of ginger. Bring the mixture almost to a boil over medium heat, making sure to stir to dissolve the sugar and honey completely.
- Reduce the heat and add the turmeric, cinnamon, black pepper, and salt. Simmer for a couple of minutes, stirring occasionally.
- Turn off the heat and let it infuse for about 30 minutes, after which strain the milk to remove the ginger and any spice residues.
- Add the fresh cream to the spiced milk and mix well.
- Pour the mixture into an ice cream maker and follow the manufacturer’s instructions. If you do not have an ice cream maker, place the mixture in a freezer-safe container and stir every 30-45 minutes to break up any ice crystals until the ice cream reaches the desired consistency.
- Once the ice cream is well frozen, it is ready to be served. If a softer consistency is desired, let the ice cream sit at room temperature for a few minutes before serving.
The golden milk gelato is characterized by its unique flavor from the combination of turmeric and spices. It’s a real treat for the palate, perhaps to be accompanied with ginger biscuits or an extra dusting of cinnamon on top.
