Golden Cutlets

Golden cutlets are a simple and delicious dish. Here’s how to prepare them Italian-style:

Ingredients

  • 4 slices of meat (you can use veal, pork, chicken, or turkey depending on your preference)
  • 100 g of flour
  • 2 eggs
  • 200 g of breadcrumbs
  • Extra virgin olive oil or frying oil
  • Salt
  • Pepper (optional)
  • Lemon wedges for serving

Preparation

  1. Start by lightly beating the meat slices between two sheets of parchment paper until they are of uniform thickness. This will make the meat more tender and facilitate cooking.
  2. Season both sides of the meat slices with salt (and pepper if you wish).
  3. Prepare three plates: one with flour, one with beaten eggs, and another with breadcrumbs.
  4. Dip each meat slice in the flour, ensuring it is completely covered. Shake off the excess flour.
  5. Next, pass the floured meat through the beaten eggs, making sure the eggs stick to all sides.
  6. Finally, coat the meat in the breadcrumbs, pressing lightly to adhere the breading well.
  7. Heat plenty of oil in a frying pan and fry the cutlets until they are golden brown and crispy on both sides.
  8. Drain them on paper towels to remove excess oil.
  9. Serve the golden cutlets hot, accompanied by lemon wedges to squeeze over as desired.

Curiosity

The cutlets can also be baked for a lighter version. In this case, preheat the oven to 200°C and cook the cutlets on a baking sheet lined with parchment paper for about 15-20 minutes or until golden, turning halfway through cooking to ensure they are browned on both sides.
