Golden Cutlets

Ingredients
- 4 slices of meat (you can use veal, pork, chicken, or turkey depending on your preference)
- 100 g of flour
- 2 eggs
- 200 g of breadcrumbs
- Extra virgin olive oil or frying oil
- Salt
- Pepper (optional)
- Lemon wedges for serving
Preparation
- Start by lightly beating the meat slices between two sheets of parchment paper until they are of uniform thickness. This will make the meat more tender and facilitate cooking.
- Season both sides of the meat slices with salt (and pepper if you wish).
- Prepare three plates: one with flour, one with beaten eggs, and another with breadcrumbs.
- Dip each meat slice in the flour, ensuring it is completely covered. Shake off the excess flour.
- Next, pass the floured meat through the beaten eggs, making sure the eggs stick to all sides.
- Finally, coat the meat in the breadcrumbs, pressing lightly to adhere the breading well.
- Heat plenty of oil in a frying pan and fry the cutlets until they are golden brown and crispy on both sides.
- Drain them on paper towels to remove excess oil.
- Serve the golden cutlets hot, accompanied by lemon wedges to squeeze over as desired.

The cutlets can also be baked for a lighter version. In this case, preheat the oven to 200°C and cook the cutlets on a baking sheet lined with parchment paper for about 15-20 minutes or until golden, turning halfway through cooking to ensure they are browned on both sides.
