Gnocchi with Seasonal Vegetables and Tuna
17/11/2023Gnocchi with seasonal vegetables and tuna is a versatile and colorful dish that allows the use of fresh ingredients found in local markets depending on the season. Here’s the recipe:
Ingredients
- 500 g of potato gnocchi (fresh or ready-made)
- 200 g of canned tuna, drained
- 1 medium zucchini
- 1 red bell pepper
- 1 carrot
- 1 small onion
- 2 cloves of garlic
- Salt and pepper to taste
- Extra virgin olive oil
- Chopped fresh parsley (optional)
- Lemon juice (optional)
- Chili pepper (optional)
Preparation
-
Start by washing and cutting your seasonal vegetables: dice the zucchini, slice the bell pepper into strips, and the carrot into thin rounds. Finely chop the onion and garlic.
-
In a large skillet, heat a drizzle of extra virgin olive oil and sauté the garlic and onion until they become translucent.
-
Add the chopped vegetables to the skillet and sauté until they soften. If desired, add a pinch of chili pepper to give the dish a spicy note.
-
While the vegetables are cooking, bring a pot of salted water to a boil and cook the gnocchi according to the package instructions (they are usually ready when they float to the surface). Drain them and reserve a cup of the cooking water.
-
Add the drained tuna to the vegetables in the skillet and gently mix.
-
Combine the cooked gnocchi with the mixture of vegetables and tuna. If necessary, add a bit of the gnocchi cooking water to make it creamier.
-
Season with salt and pepper, and if you like, add a bit of lemon juice for a tangy and fresh note.
-
Sprinkle with chopped fresh parsley just before serving to add color and freshness to the dish.
