Gnocchi with Sea Robin

Ingredients
- 500 g of potato gnocchi (you can buy them ready-made or make them at home)
- 400 g of sea robin (also known as gurnard)
- 200 g of cherry tomatoes
- 2 cloves of garlic
- Fresh parsley to taste
- 1 glass of dry white wine
- Extra virgin olive oil
- Salt and pepper to taste
Preparation

Start by cleaning the sea robin. Remove the entrails, scales, and fins, then cut it into cubes or leave it whole, according to your preference.

In a large pan, slightly fry the garlic in extra virgin olive oil. Make sure not to burn it; it should only become golden to flavor the oil.

Add the halved cherry tomatoes and cook for a few minutes until they start to break down.

Add the pieces of sea robin to the pan, let them color on all sides, and then deglaze with the white wine. Allow the alcohol to evaporate on high heat.

Lower the heat and cook everything on medium-low heat for about 10-15 minutes, until the sea robin is cooked, and the sauce has slightly reduced. Adjust salt and pepper to taste.

In the meantime, cook the gnocchi in plenty of salted water. As soon as they float to the top, they are ready, so drain them with a slotted spoon and transfer them directly into the pan with the sea robin sauce.

Toss them with the sauce for a couple of minutes so that the gnocchi are well flavored.

Sprinkle with chopped fresh parsley before serving.
