Gnocchi with salmon

Salmon gnocchi is a rich and tasty first course that combines the tradition of Italian potato pasta with the delicate taste of salmon. Here is a simple recipe to prepare them.

Ingredients

  • 500 g of potato gnocchi
  • 200 g of smoked salmon
  • 200 ml of cooking cream
  • 1 shallot
  • White wine to taste
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Fresh dill for garnish (optional)

Preparation

  1. In a large pan, sauté the chopped shallot until transparent. You can use a drizzle of extra virgin olive oil for frying.
  2. Cut the smoked salmon into strips and add it to the shallot, cooking for a couple of minutes.
  3. Deglaze with a bit of white wine and let the alcohol evaporate.
  4. Pour the cream into the pan with the salmon, season with salt and pepper, and cook on low heat for a few minutes until the sauce slightly thickens.
  5. In the meantime, cook the gnocchi in plenty of salted water following the instructions on the package; they are usually ready when they float to the surface.
  6. Drain the gnocchi and transfer them to the pan with the salmon sauce, tossing them for a minute so that they absorb the seasoning.
  7. Serve hot, garnished with chopped fresh dill if you wish to add a touch of freshness and color.

The pairing of gnocchi and smoked salmon is not typical of Italian cuisine but arises from the meeting of typical Italian products and international ingredients.
