Preparation
- Start by preparing the gnocchi. Boil the potatoes with their skins on in boiling water until they are soft. Drain, peel them while they are still hot, and pass them through a potato ricer.
- On a work surface, create a well with the flour and place the potatoes, a pinch of salt, and the egg in the center. Knead until you have a smooth and not too sticky dough, adding flour if necessary.
- Divide the dough into parts and form logs about 2 cm in diameter. Cut each log into pieces about 2 cm long to form the gnocchi.
- Press each gnocco on a fork or a special tool to give it the characteristic ridges.
- Clean the friggitelli by removing the stem and interior seeds, and chop them into small pieces or strips.
- In a large pan, sauté the garlic cloves with extra virgin olive oil, then add the friggitelli. Salt them and cook over medium-low heat until they become soft.
- In another pan, cook the sausage meat crumbled without the casing until it becomes crispy.
- Combine the sausage with the friggitelli and let everything flavor together for a few minutes. If you want, you can add a spicy touch with some chili pepper.
- Meanwhile, cook the gnocchi in plenty of salted water. They are ready when they float to the surface, usually after 1-2 minutes.
- Drain the gnocchi directly into the pan with the sausage and friggitelli. Sauté them together for a couple of minutes and adjust the seasoning with pepper.
- Serve hot, with a sprinkle of grated Pecorino Romano cheese if desired.
