Four Cheese Gnocchi

Ingredients
- 1 kg of potato gnocchi
- 200 g of fontina cheese
- 150 g of gorgonzola cheese
- 100 g of grated parmesan cheese
- 100 g of grated pecorino cheese
- 200 ml of cooking cream
- Nutmeg to taste
- Salt and pepper to taste
- Butter for greasing the baking dish
Preparation
- Preheat the oven to 200 °C and grease a baking dish with a little butter.
- Cut the fontina and gorgonzola into small cubes and put them in a large bowl.
- Add the grated parmesan and pecorino to the bowl with the cheese cubes.
- Pour the cream into a small pot and heat over medium heat until warm. It is not necessary to bring it to a boil.
- Pour the warm cream over the grated and cubed cheeses and stir until a homogeneous cream is obtained. Season with salt, pepper, and grated nutmeg to taste.
- Cook the gnocchi in plenty of salted water following the instructions on the package or until they float to the surface, indicating that they are ready.
- Drain the gnocchi and put them in the buttered baking dish.
- Pour the prepared cheese cream over the gnocchi and mix gently, trying to distribute the sauce evenly.
- Bake the baking dish for about 10-15 minutes, until the cheese becomes golden and slightly crispy on the surface.
- Remove the four cheese gnocchi from the oven and serve immediately.
The cream will help bind the cheeses and create a perfect creamy sauce to coat the gnocchi. Some variations include the addition of fresh aromatic herbs such as thyme or basil to give a fresh touch to the dish. It is also possible to prepare a lighter version by replacing the cream with whole or partially skimmed milk.
