Gnocchi with Red Pepper Cream
17/11/2023Here’s the recipe for gnocchi with red pepper cream. This dish combines the Italian tradition of potato gnocchi with a flavorful condiment based on peppers.
Ingredients
- 500 g of potato gnocchi (fresh or prepackaged)
- 2 medium-sized red bell peppers
- 1 small onion
- 1 clove of garlic
- 100 ml of cooking cream
- Extra virgin olive oil (to taste)
- Salt and pepper (to taste)
- Fresh basil or parsley for garnishing (optional)
- Grated Parmesan cheese (optional)
Preparation

Begin by washing and drying the peppers. Then cut them in half, remove the seeds and the white inner parts, and cut the flesh into strips or pieces.

Peel and finely chop the onion and garlic clove.

In a large frying pan, heat a drizzle of extra virgin olive oil and add the chopped onion and garlic. Let them sauté until they become translucent.

Add the cut peppers to the pan and cook for about 10-15 minutes, until the peppers are soft. Make sure to stir occasionally.

Once the peppers are cooked, transfer them to a blender or use an immersion blender to create a cream. Add the cooking cream, salt, and pepper to taste, and blend until smooth. If necessary, you can put the cream back on the heat to thicken it a bit.

Meanwhile, bring a pot of salted water to a boil and add the gnocchi. Cook them until they float to the surface, indicating that they are ready (it usually takes 2-3 minutes for fresh gnocchi).

Drain the gnocchi and add them to the pan with the red pepper cream. Gently mix the gnocchi with the cream to coat well.

Serve immediately, garnishing with fresh basil leaves or chopped parsley, and if desired, a sprinkle of grated Parmesan cheese.
