Ingredients

  • 500 g of potato gnocchi (fresh or prepackaged)
  • 2 medium-sized red bell peppers
  • 1 small onion

  • 100 ml of cooking cream

Preparation

  1. Begin by washing and drying the peppers. Then cut them in half, remove the seeds and the white inner parts, and cut the flesh into strips or pieces.

  2. Peel and finely chop the onion and garlic clove.

  3. In a large frying pan, heat a drizzle of extra virgin olive oil and add the chopped onion and garlic. Let them sauté until they become translucent.

  4. Add the cut peppers to the pan and cook for about 10-15 minutes, until the peppers are soft. Make sure to stir occasionally.

  7. Drain the gnocchi and add them to the pan with the red pepper cream. Gently mix the gnocchi with the cream to coat well.
