Gnocchetti with Walnuts, Parsley, and Speck

Ingredients

  • 400 g of gnocchetti (you can also use potato gnocchi if you prefer)
  • 100 g of speck, cut into strips
  • 80 g of coarsely chopped walnuts
  • 1 bunch of fresh parsley
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • Cream (optional, for a creamier version)

Preparation

  1. Bring a pot of salted water to a boil to cook the gnocchetti according to the instructions on the package.

  2. Meanwhile, in a skillet, heat a drizzle of olive oil and sauté the garlic clove to flavor the oil. Remove the garlic as soon as it becomes golden.

  3. Add the speck strips and let them brown until they become crispy.

  4. Incorporate the chopped walnuts into the skillet with the speck and toast everything for a few minutes, being careful not to burn the nuts.

  5. Wash and finely chop the fresh parsley.

  6. Drain the gnocchetti al dente and transfer them to the skillet with the speck and walnuts. If you prefer a creamier texture, you can add some cream at this point.
