Gnocchetti with Walnuts, Parsley, and Speck
17/11/2023This recipe for gnocchetti with walnuts, parsley, and speck is a tasty variant that combines the sweetness of the walnuts with the aromatic parsley and the smoky flavor of the speck. Let’s see together how to prepare it.
Ingredients
- 400 g of gnocchetti (you can also use potato gnocchi if you prefer)
- 100 g of speck, cut into strips
- 80 g of coarsely chopped walnuts
- 1 bunch of fresh parsley
- 1 clove of garlic
- Extra virgin olive oil
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
- Cream (optional, for a creamier version)
Preparation
-
Bring a pot of salted water to a boil to cook the gnocchetti according to the instructions on the package.
-
Meanwhile, in a skillet, heat a drizzle of olive oil and sauté the garlic clove to flavor the oil. Remove the garlic as soon as it becomes golden.
-
Add the speck strips and let them brown until they become crispy.
-
Incorporate the chopped walnuts into the skillet with the speck and toast everything for a few minutes, being careful not to burn the nuts.
-
Wash and finely chop the fresh parsley.
-
Drain the gnocchetti al dente and transfer them to the skillet with the speck and walnuts. If you prefer a creamier texture, you can add some cream at this point.
-
Add the chopped parsley, season with salt and pepper to taste, and sauté the gnocchetti in the skillet to blend all the ingredients well.
-
Serve hot with a sprinkle of grated Parmesan cheese.
Fun Fact
Gnocchi is a very versatile dish that lends itself to numerous variations. The recipe I proposed embraces flavors typical of the Trentino-Alto Adige region thanks to the speck, a type of smoked raw ham typical of this region. The combination with walnuts and parsley adds a crunchy and fresh note that balances the strong taste of the speck.
Enjoy your meal and I hope this recipe adds an Italian touch to your table!
