Gnocchetti with Pea Cream

Ingredients

Preparation

  1. Start by peeling and finely chopping the shallot.
  2. In a pan, heat a drizzle of extra virgin olive oil and add the chopped shallot. Sauté until it becomes transparent.
  3. Add the peas to the pan, season with salt and pepper to taste.
  4. Cook over medium-low heat for about 10 minutes, adding a little water if necessary to avoid the peas sticking.
  5. Once cooked, transfer the peas to a mixer or use an immersion blender to puree them. If you desire a smoother texture, you can strain the cream through a sieve.
  6. Put the pea cream back in the pan and add the cooking cream. Stir well and check the flavor, adjusting the salt and pepper if necessary.
  7. Meanwhile, bring a pot of salted water to a boil and cook the gnocchetti according to the package instructions.
  8. Drain the gnocchetti and add them to the pan with the pea cream. Toss everything together for a couple of minutes so the gnocchetti can absorb the flavor of the cream.
  9. Plate the gnocchetti and sprinkle with grated Parmesan cheese. If desired, add a few fresh mint leaves to decorate and give an extra touch of freshness.
