Glazed Pork Rack with Apples

Ingredients
- 1 pork rack (about 1.5 kg)
- Salt and pepper to taste
- Extra virgin olive oil
- 2 apples (preferably of a sweet and slightly tart variety)
- 1 onion
- 2 cloves of garlic
- 1 sprig of fresh rosemary
- 200 ml of apple cider or alternatively, white wine
- 2 tablespoons of balsamic vinegar
- 2 tablespoons of honey
- 2 tablespoons of Dijon mustard or another good quality mustard
Preparation
- Preheat the oven to 180 °C (356 °F).
- Season the pork rack evenly with salt and pepper on all sides. In a large, oven-safe skillet, heat a bit of oil and brown the rack on all sides until the surface is nicely golden brown.
- Meanwhile, clean and cut the apples into thin wedges, slicing the onion and mincing the garlic as well.
- Once the pork is browned, remove it from the pan and set it aside. In the same pan, add another drizzle of oil if needed and sauté the onion and garlic until they become translucent.
- Add the apple wedges and let them slightly caramelize. Sprinkle the crumbled rosemary sprig over, and once the apples start to soften, deglaze with cider (or white wine) and let it reduce for a few minutes.
- In the meantime, in a bowl, mix the honey with the mustard and balsamic vinegar until you get a smooth glaze.
- Put the pork rack back in the pan with the apples and onions, then brush the pork with the prepared glaze.
- Bake everything, letting it cook for about 1 hour to 1 hour and 30 minutes or until the pork is cooked to the desired doneness. During cooking, baste the rack occasionally with its pan juices to keep it moist and to enrich the glaze.
- Once cooked, let the pork rest for 10 minutes before slicing.
Serve the glazed pork rack with the apples, which will have taken on a delicious flavor thanks to the cooking with the meat and the glaze.
