Glazed Madeleines

Ingredients

For the Madeleines:

  • 1/2 packet of baking powder for cakes

  • 100 g of icing sugar
  • Lemon juice as needed (to achieve the desired consistency)

Preparation

  1. Preheat the oven to 190 °C.
  2. In a bowl, whisk the eggs with the sugar until you get a light and fluffy mixture.
  3. Add the grated lemon zest and the pinch of salt.
  4. Gently fold in the sifted flour with the baking powder, alternating with the melted butter. Be careful to stir from the bottom up so as not to deflate the mixture.
  5. Grease and flour the Madeleine molds or use a releasing spray if you prefer.
  6. Fill them 3/4 full with the batter and let rest for about 20 minutes; this step helps create the typical bump on the back of the madeleines.
  7. Bake in the hot oven for about 10-12 minutes or until they are slightly golden.
  8. Allow them to cool for a moment before unmolding.

For the glaze:

  1. Put the icing sugar in a bowl and start adding a few drops of lemon juice until you reach a smooth and not too liquid consistency.
  2. Glaze the now-cold madeleines by dipping the domed side into the glaze or drizzling a little glaze over them.
  3. If you wish, sprinkle with a bit of grated lemon zest over the still wet glaze.
  4. Let the glaze dry before serving.

The Madeleines are named after Madeleine Paulmier, who served them for the first time at the court of Lorraine in the 18th century. They also became famous thanks to Marcel Proust, who in his novel “In Search of Lost Time” describes them as a powerful catalyst for childhood memories.
