Glazed Coffee Bundt Cake

Ingredients
- 250 grams of all-purpose flour
- 200 grams of granulated sugar
- 100 grams of soft butter
- 4 eggs
- 120 milliliters of cold espresso coffee
- 1 packet of baking powder
- 1 pinch of salt
- Grated zest of 1 lemon
For the glaze:
- 100 grams of powdered sugar
- About 20 milliliters of espresso coffee (adjust according to the desired consistency)
Preparation
- Take a large bowl and cream the soft butter with the granulated sugar until you get a homogeneous and fluffy mixture.
- Separate the yolks from the whites and add the yolks to the butter and sugar mixture, mixing well after each addition.
- Add the cold espresso coffee and lemon zest, and blend well.
- Incorporate the sifted flour with the baking powder and a pinch of salt, stirring gently to avoid lump formation.
- Beat the egg whites until stiff and fold them gently into the mixture using a spatula and movements from the bottom up to avoid deflating them.
- Pour the mixture into a previously buttered and floured Bundt cake pan.
- Bake in a preheated oven at 180 °C for about 35-40 minutes or until a skewer inserted into the center comes out clean.
- Let the Bundt cake cool down.
For the glaze:
- Sift the powdered sugar and mix it with the espresso coffee until you achieve a smooth and sufficiently thick consistency to cover the cake.
- When the Bundt cake is cool, pour the glaze over it and let it solidify before serving.
