Gingerbread muffin

Ingredients
- 260 g of flour
- 1 teaspoon of baking soda
- 1 pinch of salt
- 4 teaspoons of ginger powder
- 2 teaspoons of cinnamon powder
- 1 teaspoon of ground cloves
- 1 teaspoon of nutmeg powder
- 115 g of unsalted butter, softened
- 100 g of brown sugar
- 100 ml of molasses or Italian millefiori honey
- 1 large egg
- 240 ml of milk
For the icing (optional):
- 100 g of powdered sugar
- 1-2 tablespoons of milk

Preheat the oven to 175 °C (350 °F) and prepare a muffin tray by lining the individual compartments with paper liners.

In a bowl, mix together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.

In a larger bowl, beat the softened butter and brown sugar until light and fluffy. Add the molasses or honey and the egg and continue beating until well combined.

Add the dry ingredients to the wet mixture, alternating with the milk, until you get a smooth batter, but do not overmix.

Distribute the batter into the muffin cups, filling each compartment about 3/4 full.

Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Let the muffins cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
If you desire to add the icing:
- Mix the powdered sugar with the milk, one tablespoon at a time, until you get a smooth and fairly thick icing.
- Once the muffins have completely cooled, drizzle the icing over them with a teaspoon or use a piping bag to decorate.
