Gingerbread Cupcakes

Ingredients

  • 60 ml of whole milk

For the frosting (optional):

  • 200 g of powdered sugar
  • 2-3 tablespoons of milk or water
  • Candied ginger (for decoration)

Preparation

  1. Preheat the oven to 175 °C and prepare a muffin tin by lining it with paper liners.
  2. In a bowl, mix the flour, baking soda, spices, and salt.
  3. In another bowl, cream the soft butter with brown sugar until light and fluffy, then add the molasses (or honey).
  4. Blend in the egg to the butter and sugar mixture, mixing well.
  5. Gradually add the dry ingredients, alternating with the milk, and mix until a smooth batter is formed.
  6. Fill the paper liners about 2/3 full.
  7. Bake in the preheated oven for about 20-25 minutes, or until well risen and a toothpick inserted in the center comes out clean.
  8. Leave the cupcakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

For the frosting:

  1. Mix the powdered sugar with milk or water to get a smooth and spreadable icing (add more liquid if too thick or more sugar if too runny).
  2. When the cupcakes are cool, spread the frosting on top and decorate with pieces of candied ginger.
