Conchiglioni Stuffed with Mushrooms, Ham, and Béchamel

Ingredients

  • Large conchiglioni, as many as needed
  • 300 g of mushrooms (porcini or champignons)
  • 150 g of diced cooked ham
  • Béchamel (500 ml of milk, 50 g of butter, 50 g of flour, salt, grated nutmeg to taste)
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese to taste
  • Chopped fresh parsley to taste

Preparation

  1. Start by preparing the béchamel: in a saucepan, melt the butter, add the flour and cook for a few minutes, stirring with a whisk. Then slowly add the milk and continue stirring until the béchamel thickens. Season with salt and nutmeg.
  2. Clean the mushrooms and cut them into slices or dices, according to your preference.
  3. In a pan, fry the garlic in the oil, then remove it and add the mushrooms. Let them cook until they have lost all their water content. Then add the diced cooked ham and sauté everything for a few minutes.
  4. Mix a part of the béchamel with the mushrooms and ham, stirring to blend the flavors. Adjust the seasoning with salt and pepper.
  5. Prepare the conchiglioni: boil them in salted water for about half the time indicated on the package, they should remain very al dente.
  6. Once drained, let them cool down enough to be handled, and then fill them with the mushroom, ham, and béchamel mixture.
  7. Arrange the stuffed conchiglioni in an oiled baking dish, cover them with the remaining béchamel, and sprinkle with plenty of Parmesan cheese.
  8. Bake in a preheated oven at 180 °C for about 20 minutes, until a golden crust forms on the surface.

Sprinkle with chopped fresh parsley before serving to add freshness and color to the dish.
