Giant American Pancakes

Ingredients
- 250 g of flour
- 2 tablespoons of sugar
- 1/2 teaspoon of salt
- 2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 2 large eggs
- 30 g of melted and cooled butter, plus some for greasing the pan
- 500 ml of milk
- 1 teaspoon of vanilla extract (optional)
Preparation
- In a large bowl, sift together the flour, sugar, salt, baking powder, and baking soda.
- In another bowl, beat the eggs and then add the melted butter, milk, and vanilla extract, stirring well until you have a homogeneous mixture.
- Pour the liquid ingredients over the dry ingredients and mix with a whisk or wooden spoon until just combined. Do not overmix; some lumps are okay.
- Heat a large pan or griddle over medium heat and grease the surface with a bit of butter.
- Pour about 1/2 cup of batter per pancake into the pan and cook until bubbles form on the surface and the edges seem set, about 2-3 minutes.
- Carefully flip the pancake using a wide spatula and cook for another 1-2 minutes or until the pancake is golden and cooked through the center.
- Remove the pancake from the pan and repeat with the remaining batter, adding more butter to the pan if necessary.
- Serve the pancakes warm with maple syrup, butter, fresh fruit, or other toppings of your choice.
