Giant American Pancakes

Ingredients

  • 250 g of flour
  • 2 tablespoons of sugar
  • 1/2 teaspoon of salt
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 2 large eggs
  • 30 g of melted and cooled butter, plus some for greasing the pan
  • 500 ml of milk
  • 1 teaspoon of vanilla extract (optional)

Preparation

  1. In a large bowl, sift together the flour, sugar, salt, baking powder, and baking soda.
  2. In another bowl, beat the eggs and then add the melted butter, milk, and vanilla extract, stirring well until you have a homogeneous mixture.
  3. Pour the liquid ingredients over the dry ingredients and mix with a whisk or wooden spoon until just combined. Do not overmix; some lumps are okay.
  4. Heat a large pan or griddle over medium heat and grease the surface with a bit of butter.
  5. Pour about 1/2 cup of batter per pancake into the pan and cook until bubbles form on the surface and the edges seem set, about 2-3 minutes.
  6. Carefully flip the pancake using a wide spatula and cook for another 1-2 minutes or until the pancake is golden and cooked through the center.
  7. Remove the pancake from the pan and repeat with the remaining batter, adding more butter to the pan if necessary.
  8. Serve the pancakes warm with maple syrup, butter, fresh fruit, or other toppings of your choice.
