Gianduia Pudding with Orange Sauce
17/11/2023The gianduia pudding with orange sauce is a delicious and flavor-rich dessert. Here is the recipe divided between ingredients and preparation.
Ingredients for the gianduia pudding:
- 500 ml of milk
- 150 g of gianduia cream (or hazelnut spread)
- 50 g of sugar
- 40 g of cornstarch (Maizena)
- A pinch of salt
Ingredients for the orange sauce:
- Juice of 2 oranges (approximately 200 ml)
- Grated zest of 1 organic orange
- 50 g of sugar
- 1 tablespoon of cornstarch
Preparation
-
In a saucepan, pour the milk (keeping some aside to dissolve the cornstarch), add sugar, a pinch of salt, and the gianduia cream. Place over heat and warm on low heat, stirring to dissolve the gianduia cream.
-
Dissolve the cornstarch in the milk set aside earlier, ensuring there are no lumps.
-
When the milk in the saucepan is warm but not yet boiling, pour in the dissolved cornstarch and stir continuously waiting for the mixture to thicken to the desired pudding consistency.
-
Once it has reached the right density, remove from the heat and pour the pudding into molds or individual bowls previously warmed with hot water (to prevent thermal shock).
-
Let it cool down and then place in the fridge to set for at least 2-3 hours.
Preparation of the orange sauce:
-
In another saucepan, combine the orange juice and zest with the sugar. Bring to a gentle boil.
-
Dissolve a tablespoon of cornstarch in a little cold water and then add it to the orange mixture, stirring well to prevent lumps.
-
Continue cooking until the sauce has slightly thickened. Remove from the heat and allow to cool.
To serve, remove the pudding from the fridge, unmold if necessary, and pour over the orange sauce.
Curiosity
Gianduia is one of the excellences of Piedmont, an Italian region renowned worldwide for its chocolate and hazelnut products. The combination with orange creates a contrast between the intense, sweet taste of gianduia and the tangy orange, making this dessert sophisticated and balanced.
