Ghost Cake Pops

Preparation

  1. Crumble the cake or sponge cake finely into a large bowl until you get a kind of “earth” of crumbs.
  2. Add the cream cheese to the cake crumbs and mix until you get a uniform mixture. You should achieve a consistency that allows you to shape compact balls.
  3. With your hands, form balls of the mixture and arrange them on a tray lined with parchment paper.
  4. Melt the white chocolate in a double boiler or in the microwave, being careful not to burn it.
  5. Dip the tip of each stick in the melted chocolate and then stick it into a cake ball (this will help “seal” the stick inside the cake pop).
  6. Place the balls in the freezer for about 20 minutes, to slightly harden them.
  7. Take the balls out of the freezer and immerse them one by one in the melted white chocolate, making sure to cover them completely.
  8. Before the chocolate solidifies, add two chocolate chips or sugar decorations to create the ghostly little eyes.
  9. Plant the sticks in a support that keeps them upright (like a block of polystyrene or simply rice in a bowl) and let the cake pops dry completely.
