Genoese-style Stockfish Accommodato

Ingredients
- 600 g of soaked stockfish
- 1 large onion
- 2 cloves of garlic
- Parsley to taste
- Pitted Taggiasca olives to taste
- 2 tablespoons of salted capers
- 3-4 medium potatoes
- 50 g of pine nuts
- 2 salted anchovies
- 500 ml of tomato puree
- Extra virgin olive oil to taste
- Salt to taste
- Pepper to taste
Preparation
- Begin by cutting the already soaked stockfish into pieces of your preferred size and set aside.
- Peel the potatoes, cut them into pieces, and place them in water to remove excess starch.
- Finely chop the onion, garlic, and parsley. In a large pan, sauté the mixture with olive oil. Make sure it doesn’t burn.
- Add the desalted and deboned anchovies to the pan, and let them dissolve while stirring with the sauté.
- Now add the previously desalted and rinsed capers, the olives, and the pine nuts. Toast for a couple of minutes.
- Pour the tomato puree into the pan, add a bit of water and bring to a boil.
- Add the potatoes, cover, and cook for about 10 minutes.
- Add the stockfish pieces, cover again, and cook for another 20-25 minutes or until the fish is well-cooked and the potatoes are tender.
- Taste and adjust the seasoning with salt and pepper according to your taste. Serve hot and sprinkle with more freshly chopped parsley.
