Fusion Ravioli

When we talk about “Fusion Ravioli,” we are referring to a dish that combines different culinary traditions. In this version, I propose ravioli that blends Italian cuisine with Asian influences. We will prepare ravioli with a filling inspired by the flavors of the Far East.

Ingredients

For the ravioli dough:

  • 200 g of tipo “00” flour
  • 2 large eggs
  • 1 pinch of salt

For the filling:

  • 200 g of minced meat (you can choose between pork, beef, or chicken)
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of finely chopped scallions
  • 1 clove of minced garlic
  • 1 teaspoon of freshly grated ginger
  • 1 teaspoon of sugar
  • Black pepper, to taste
  • 1 tablespoon of fresh coriander, chopped (optional)

For the dressing:

  • Soy sauce
  • Sesame oil
  • Chopped scallions
  • Toasted sesame seeds

Preparation

  1. Start with preparing the dough: place the flour in a mound on a work surface, add the eggs and salt in the center and start kneading until you get a smooth and elastic dough. Let it rest covered for about 30 minutes.

  2. In the meantime, prepare the filling: in a bowl, combine the minced meat with soy sauce, sesame oil, scallions, garlic, ginger, sugar, black pepper to taste, and chopped fresh coriander if you’re using it. Mix all the ingredients well.

  3. Roll out the ravioli dough using a pasta machine or a rolling pin, until you get a thin sheet.

  4. Using a round cutter or a glass, cut circles out of the dough.

  5. Place a teaspoon of filling in the center of each dough circle, then fold in half sealing the edges to form the ravioli. Make sure the edges are well sealed to prevent the filling from escaping during cooking.

  6. Bring a large pot of salted water to a boil and cook the ravioli for about 2-4 minutes or until they float to the surface.

  7. While the ravioli are cooking, prepare the dressing by mixing a little soy sauce with a drizzle of sesame oil, chopped scallions, and toasted sesame seeds in a small bowl.

  8. Drain the ravioli and dress them with the prepared mixture.

The concept of fusion in cooking is quite recent compared to the millennia-old history of ravioli. The idea of mixing ingredients and techniques from different cultures arose in the last century and has taken off with globalization, leading to many creative variants of traditional dishes, like in this case Italian ravioli with Asian flavors.
