Fusilloni with Sausage, Yellow Datterini Tomatoes and Provolone
17/11/2023Fusilloni with sausage, yellow datterini tomatoes, and provolone is a delicious and relatively simple dish to prepare. Here is the recipe for you, with an Italian touch:
Ingredients
- Fusilloni, 320 g
- Yellow datterini tomatoes, 300 g
- Sausage, 250 g
- Spicy provolone cheese, 100 g
- Extra virgin olive oil, as needed
- Garlic, 1 clove
- Black pepper, as needed
- Salt, as needed
- White wine, a glass
- Fresh basil, a few leaves
Preparation
- Begin by sautéing a clove of garlic in extra virgin olive oil in a large pan.
- Remove the casing from the sausage and crumble it into the pan, cooking until it’s well browned.
- Deglaze with a glass of white wine and let it evaporate.
- Add the halved yellow datterini tomatoes and cook over medium-low heat until they have softened, seasoning with salt and pepper to taste.
- Meanwhile, bring a pot of salted water to a boil and cook the fusilloni al dente. Drain the pasta, saving some of the cooking water.
- Transfer the fusilloni to the pan with the sauce, adding a bit of cooking water to bind everything together.
- Cut the spicy provolone cheese into cubes and add it to the pasta, stirring well until the cheese begins to melt.
- Finish with fresh basil leaves and if you like, a drizzle of raw oil before serving.
The fusillone is perfect for holding the sauce thanks to its spiral shape, and the mix of sausage with the yellow datterini tomatoes offers a contrast of flavors that pairs perfectly with the slightly spicy texture of the provolone.
Curiosity
Spicy provolone is a cheese with ancient origins, typical of the southern Italy, particularly Campania and Lombardy. It is different from sweet provolone because of the presence of lactic ferments which give it that spicy and strong taste that goes well with rustic and tasty dishes like this one.
