Fusilli in Flower Sauce with Clams and Squid

I can suggest a recipe to prepare delicious fusilli in flower sauce with clams and squid. A dish that combines pasta with the flavors of the sea, embellished with delicate edible flowers.

Ingredients

  • 320 g of fusilli
  • 500 g of true clams
  • 300 g of squid
  • 1 clove of garlic
  • Fresh parsley to taste
  • 100 ml of white wine
  • 200 g of cherry tomatoes
  • Edible flowers (such as calendula, borage, nasturtium) to taste
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Start by putting the clams in a bowl with salted water for about an hour to let them expel the sand.
  2. Clean the squid carefully, cutting them into rings or strips, according to your preference.
  3. In a large frying pan, sauté the garlic clove with a drizzle of extra virgin olive oil. Add the squid and sauté over medium-high heat for 2-3 minutes. Deglaze with the white wine and let it evaporate.
  4. Add the drained clams and cover the pan. Cook until they all open (about 5-7 minutes). Remove any clams that have not opened.
  5. Add the cherry tomatoes cut in half and cook for a few minutes, adjust the seasoning with salt and pepper.
  6. In the meantime, cook the fusilli in plenty of salted water following the cooking times indicated on the package to obtain al dente pasta.
  7. Drain the fusilli and transfer them to the frying pan with the squid and clam sauce. Stir well to flavor the pasta.
  8. With the heat off, add the previously washed edible flowers and let it rest for a few minutes so that the flowers release their aroma without wilting too much.
  9. Plate and garnish with chopped fresh parsley and some whole edible flowers for a touch of color and freshness.

As a note, not all flowers are edible, so make sure to use flowers that are safe to consume and, if possible, from organic sources to avoid contamination with pesticides. Furthermore, the quantity and type of flowers can vary according to the season and availability.

Curiosity

Edible flowers are not only a delight for the eyes but also offer a unique taste that can vary from sweet to spicy, depending on the type. They are an element of creative cooking that is becoming increasingly popular for their ability to add a touch of elegance and unexpected flavor to dishes.
