Frumini Cookies

Frumini cookies are simple and fragrant biscuits, perfect for breakfast or as a snack. Here’s the recipe:

Ingredients

  • 300 g of flour 00
  • 100 g of sugar
  • 100 g of butter
  • 1 egg
  • 1 egg yolk
  • The grated zest of one lemon
  • A pinch of salt
  • 1/2 packet of baking powder

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, mix the soft butter with the sugar until you get a creamy and homogeneous mixture.
  3. Add the whole egg and the yolk, continuing to stir to blend them well.
  4. Add the grated lemon zest and a pinch of salt.
  5. Gradually incorporate the flour previously sifted with the baking powder, kneading until you get a smooth and homogeneous dough.
  6. Wrap the dough in cling film and let it rest in the fridge for about 30 minutes.
  7. Roll out the dough on a lightly floured surface to a thickness of about 5 mm.
  8. Use cookie cutters to cut the frumini into the desired shapes.
  9. Place the cookies on a baking sheet lined with parchment paper, keeping a certain distance from each other.
  10. Bake in the oven for about 10-15 minutes, or until the cookies are golden.
  11. Remove the frumini from the oven and let them cool on a wire rack before serving.
