Frumini Cookies

Ingredients
- 300 g of flour 00
- 100 g of sugar
- 100 g of butter
- 1 egg
- 1 egg yolk
- The grated zest of one lemon
- A pinch of salt
- 1/2 packet of baking powder
Preparation
- Preheat the oven to 180 °C.
- In a bowl, mix the soft butter with the sugar until you get a creamy and homogeneous mixture.
- Add the whole egg and the yolk, continuing to stir to blend them well.
- Add the grated lemon zest and a pinch of salt.
- Gradually incorporate the flour previously sifted with the baking powder, kneading until you get a smooth and homogeneous dough.
- Wrap the dough in cling film and let it rest in the fridge for about 30 minutes.
- Roll out the dough on a lightly floured surface to a thickness of about 5 mm.
- Use cookie cutters to cut the frumini into the desired shapes.
- Place the cookies on a baking sheet lined with parchment paper, keeping a certain distance from each other.
- Bake in the oven for about 10-15 minutes, or until the cookies are golden.
- Remove the frumini from the oven and let them cool on a wire rack before serving.
