Potato Chip Nests with Eggs

Ingredients

  • 4 medium-sized potatoes
  • 4 eggs
  • Salt and pepper to taste
  • Oil for frying
  • Optional spices like paprika or chives to add flavor

Preparation

  1. Peel the potatoes and grate them with a coarse grater to obtain julienne-like strips. Soak them in cold water for a few minutes to remove excess starch, then dry them well with a clean cloth or paper towels.
  2. Heat the oil in a large pan or deep fryer. The oil should be at a temperature of about 180 °C (356 °F).
  3. Take a small amount of grated potatoes and shape them into a nest, you can use a ladle as a guide to create the round shape, making sure to leave space in the center.
  4. Fry the potato nests in hot oil until they are golden and crispy. Drain on paper towels to remove excess oil and season with a little salt.
  5. Once the nests are ready, break an egg into each one. This step can be done directly in the pan used to fry the nests with the just-drained oil, or in a separate pan if you wish the eggs to be more integrated with the nests.
  6. Cook the eggs in the nests until the whites are well set but the yolks are still soft. Adjust with salt and pepper.
  7. Serve the potato nests with eggs hot, and if desired, with a sprinkling of paprika or chopped chives.
