Omelette with Tomatoes and Basil

Here is the recipe for the omelette with tomatoes and basil, a simple and tasty dish from Italian cuisine:

Ingredients

  • 6 eggs
  • 2 ripe tomatoes
  • A bunch of fresh basil
  • Salt and pepper to taste
  • 2 tablespoons of extra virgin olive oil
  • 40 g of grated cheese, such as Parmesan or Pecorino (optional)
  • 1 clove of garlic (optional)

Preparation

  1. Wash the tomatoes, remove the seeds and cut them into cubes. Wash and dry the basil leaves and coarsely chop them.
  2. In a bowl, break the eggs and beat them with a whisk or a fork. Add the grated cheese, salt and pepper to taste and mix.
  3. In a large pan, heat the extra virgin olive oil. (If you like a hint of garlic, you can brown a whole clove of garlic in it and then remove it before adding the rest of the ingredients).
  4. Pour the egg mixture into the pan and cook over medium heat for a couple of minutes, until the edges start to set. Evenly distribute the tomatoes and basil over the surface.
  5. Let the omelette cook without stirring, until the bottom is golden and the sides can be easily detached from the pan. At this point, you can turn the omelette with the aid of a plate or lid and cook the other side, or you can finish cooking in a preheated oven at 180 °C to also cook the top.
  6. Once the omelette is golden and cooked through in the center, remove from the heat and serve hot or at room temperature.
