Frittata with Onions

Frittata with onions is a simple but very tasty dish. Here is the recipe to prepare it.

Ingredients

  • 6 eggs
  • 2-3 medium onions (white or red, depending on taste)
  • Extra virgin olive oil or butter for frying
  • Salt and pepper to taste
  • A pinch of grated cheese (Parmesan or Pecorino, optional)
  • Herbs to taste (for example, chopped parsley, optional)

Preparation

  1. Start by peeling the onions and slicing them thinly.
  2. Heat a stream of extra virgin olive oil or a piece of butter in a large pan and add the sliced onions.
  3. Cook on medium-low heat, stirring occasionally, until the onions become translucent and slightly golden. This step could take about 10-15 minutes.
  4. In the meantime, crack the eggs into a bowl, add salt, pepper and beat them well with a fork or a manual whisk.
  5. If you wish, you can add some grated cheese to enrich the flavour and/or some chopped herbs.
  6. When the onions are ready, distribute them evenly in the pan and pour the beaten eggs over them.
  7. Cook the frittata on medium-low heat without turning it, until the bottom is golden and the top almost set.
  8. To flip the frittata, help yourself with a plate or a lid: cover the pan and quickly turn it over to transfer the frittata to the plate, then gently slide the frittata back into the pan to cook the other side.
  9. Continue cooking for a few more minutes until the other side is golden too.
  10. Serve the onion frittata hot or at room temperature.
