Frittata Roll-Up

The frittata roll-up is a versatile and tasty dish, great both as an appetizer and as a main course. It can be filled with various ingredients, according to personal taste and what you have available. Here’s the recipe:

Ingredients

  • 6 eggs
  • Salt, to taste
  • Black pepper, to taste
  • Choice of aromatic herbs (e.g. parsley, basil), chopped
  • 150 g of cream cheese (like Philadelphia)
  • 100 g of cooked ham slices
  • 50 g of arugula (or baby spinach)

Preparation

  1. Start by beating the eggs in a bowl, add salt, pepper, and the chopped herbs. Mix until you have a homogeneous mixture.
  2. Heat a lightly oiled or buttered non-stick pan and pour in the beaten eggs. Cook over medium heat, trying to obtain a frittata that is not too thick and has golden edges. Make sure to cook it on both sides.
  3. Once ready, transfer the frittata to a plate and let it cool down for a few minutes.
  4. Spread the cream cheese evenly over the surface of the frittata.
  5. Lay the slices of cooked ham on top of the cheese, then add a layer of arugula or baby spinach.
  6. Using parchment paper, start rolling the frittata tightly on itself, forming the roll-up.
  7. Wrap the roll in the parchment paper and let it rest in the refrigerator for at least an hour, this will allow the roll to become firm.
  8. After the resting time, gently unroll the roll from the parchment paper and cut the roll into slices about 1-2 cm thick.
  9. Arrange the roll-ups on a serving plate and serve.

The frittata roll-up can be personalized in many ways, for example, you can replace the cooked ham with smoked salmon and add a bit of dill to the cream cheese for a fresh and different touch. It’s also possible to add any vegetables you like, such as grilled zucchini or thinly sliced roasted peppers. A play of colors and flavors that will amaze your guests!
