  • 1 ciabatta or baguette sandwich bread
  • 2 eggs
  • Salt and pepper to taste

  • Grated or cubed cheese (pecorino, parmesan, scamorza, depending on preference)
  • Cold cuts of your choice (cooked ham, cured ham, bacon, salami)
  • Vegetables of your choice (spinach, cherry tomatoes, zucchini)
  • Extra virgin olive oil or butter to cook the omelet

Preparation

  1. Break the eggs into a bowl, season with salt and pepper to taste. Add the chopped aromatic herbs and a spoonful of milk, then beat everything with a fork until you get a smooth mixture.

  2. Heat some oil or a knob of butter in a pan. Pour in the eggs and cook over medium-low heat, trying to obtain an omelet that’s not too thick, and flip it halfway through cooking to brown it on both sides. Add the cheese and the vegetables that you will have previously cooked or leave raw depending on the type chosen.

  3. In the meantime, cut the sandwich bread in half to get a pocket, and hollow it out slightly to make room for the omelet.

  4. When the omelet is ready and the cheese has slightly melted, insert it into the opening of the sandwich, add the cold cuts, and more fresh vegetables if you wish.
