Frittata Rolls in a Thousand Ways

Frittata rolls are a great idea for a tasty appetizer and can be stuffed in many ways. For the base, we can start with a simple frittata and then vary the filling according to taste and availability.

Ingredients for the frittata:

  • 4 eggs
  • Salt to taste
  • Pepper to taste (optional)
  • A drizzle of oil or a knob of butter for greasing the pan

For the filling, I propose three variations:

  1. Mediterranean Filling:
  • 100 g of spreadable fresh cheese (like ricotta, stracchino, or other to taste)
  • Sun-dried tomatoes in oil, finely chopped
  • Pitted black olives, chopped
  • Fresh basil
  • Salt and pepper
  1. Rustic Filling:
  • 100g of soft cheese (like gorgonzola or Brie)
  • 2-3 slices of cooked or raw ham
  • Fresh arugula
  1. Veggie Filling:
  • 100g of hummus
  • Julienne-cut carrots
  • Grilled zucchini
  • Fresh or sautéed spinach

Preparation

  1. Prepare the frittata by beating the eggs in a bowl, season with salt and pepper, and cook them in a lightly greased non-stick pan. Cook the frittata low and wide, so you can roll it up easily afterwards.

  2. Once ready, remove the frittata from the heat and let it cool. You can speed up the cooling process by placing it on a large plate.

  3. While the frittata is cooling, prepare the filling of your choice. If you have opted for the Mediterranean filling, mix the spreadable cheese with the chopped sun-dried tomatoes, olives, and basil leaves; for the Rustic, spread the cheese on the frittata and add the ham and arugula on top; for the Veggie, spread the hummus and arrange carrots, zucchini, and spinach.

  4. Spread the filling on the cooled frittata, leaving about a 1 cm edge free.

  5. Carefully roll up the filled frittata on itself, creating a compact roll.

  6. Wrap the frittata roll in cling film and place it in the refrigerator for at least an hour, this will allow the ingredients to set together and the frittata to maintain its shape.

  7. When ready to serve, remove the cling film and cut the frittata roll crosswise, creating rolls.
