Frittata Rolls

Frittata rolls are a tasty and versatile appetizer. They can be stuffed in many different ways, but I’ll give you a basic recipe that you can then customize to your liking.

Ingredients

  • 6 eggs
  • Salt and pepper to taste
  • Extra virgin olive oil
  • For the filling:
    • Sliced cooked ham
    • Cream cheese or cheese slices of choice
    • Fresh aromatic herb of choice (e.g. basil, parsley)

Preparation

  1. Beat the eggs in a bowl, add salt and pepper to taste and mix well until you get a homogeneous mixture.
  2. Heat a drizzle of oil in a non-stick frying pan and pour a part of the egg mixture in, spreading it evenly to form a thin omelette.
  3. Cook the omelette for 2-3 minutes on each side until it is golden brown and cooked evenly. It usually should not be too thick so as to be able to roll it easily.
  4. Once cooked, transfer the omelette onto a plate and proceed in the same way with the rest of the egg mixture to create more omelettes.
  5. Spread a thin layer of cream cheese or arrange cheese slices to cover the surface of each omelette.
  6. Add a slice of cooked ham on each omelette and if you like a few leaves of fresh aromatic herb.
  7. Carefully roll up the stuffed omelette, forming the rolls.
  8. At this point, you can cut the rolls into pieces like sushi or leave them whole depending on your preferred presentation.
  9. Arrange the rolls on a serving plate and serve them at room temperature or slightly warmed.

Frittata rolls can be enriched with a variety of ingredients to taste, such as grilled vegetables, smoked salmon, speck, or the classic caprese with tomato and mozzarella. This recipe is an excellent solution when you have leftovers of cheese or ham in the fridge and want to prepare something quick and tasty.
