Fried Shrimp with Mango Sauce

Ingredients
- 500 g of fresh or frozen shrimp, cleaned and peeled
- Flour, as needed for breading
- 2 eggs
- Breadcrumbs, as needed
- Salt, as needed
- Pepper, as needed
- Seed oil for frying
For the mango sauce:
- 1 ripe mango
- The juice of 1 lime
- 1 tablespoon of honey
- 1 chili pepper (optional, depending on the desired level of spiciness)
- Salt, as needed
- A pinch of black pepper
Preparation
- If using frozen shrimp, thaw them completely before starting. Dry them well with paper towels.
- Set up three plates with flour, beaten eggs seasoned with salt and pepper, and breadcrumbs, respectively.
- Coat the shrimp first in flour, then dip in the egg, and finally cover with breadcrumbs, making sure they are well coated.
- In a deep frying pan, heat plenty of seed oil and when it has reached the right temperature, fry the shrimp until they are golden and crispy. This usually takes about 2-3 minutes depending on the size of the shrimp.
- Drain them on paper towels to remove excess oil and season with salt to taste.
For the mango sauce:
- Cut the mango and blend the pulp with the lime juice, honey, salt, and pepper until you have a smooth sauce.
- If you want a spicy touch, you can add a little fresh or powdered chili pepper while blending the sauce.
Serve the shrimp immediately with the mango sauce on the side.
