Fried Rolls with Vegetables and Prawns

Here is the recipe for fried rolls with vegetables and prawns, a dish that combines the flavors of the sea with those of the garden, with a crunchy touch given by the frying.

Ingredients

  • 12 prawns, shelled and cleaned
  • 1 zucchini
  • 1 carrot
  • 1 yellow pepper
  • 12 fresh basil leaves
  • 12 slices of thin pastry for rolls (such as brick dough or spring roll pastry)
  • Salt and pepper to taste
  • Flour, for dusting
  • 2 eggs, for breading
  • Breadcrumbs, for breading
  • Oil for frying

Preparation

  1. Start by cutting the zucchini, carrot, and pepper into thin sticks as long as the prawns.
  2. In a pan with a drizzle of oil, sauté the vegetables for a couple of minutes adjusting with salt and pepper. The veggies should stay crunchy. Let them cool down.
  3. Lay out a slice of pastry for rolls. Place some vegetables in the center, on top put a prawn and a basil leaf.
  4. Roll the pastry around the filling, fold the sides towards the center and continue rolling to form a roll. Use a bit of water to seal the ends of the pastry.
  5. Repeat the process for all the prawns.
  6. Prepare your breading station: put flour on a plate, beat the eggs in a bowl, and place the breadcrumbs on another plate.
  7. Bread each roll by first dusting it in flour, then dipping it in egg, and finally covering it in breadcrumbs.
  8. Heat plenty of oil in a pan and when it’s hot, fry the rolls until they are golden and crispy.
  9. Drain them on paper towels and serve hot.
