Fried Rabbit

Here’s how to prepare Italian-style fried rabbit, a rustic and delicious dish:

Ingredients

  • 1 rabbit, cut into pieces
  • Flour, as needed for breading
  • 2 eggs
  • Salt and pepper, to taste
  • Frying oil
  • 1 lemon (for serving)
  • (Optional) Aromatic herbs such as rosemary or sage

Preparation

  1. Clean the rabbit pieces well and pat them dry with paper towels.
  2. In a bowl, beat the eggs with a pinch of salt and pepper.
  3. Pour some flour into a deep plate.
  4. Dip the rabbit pieces first in the beaten egg and then coat them in flour for breading.
  5. In a large pan, heat plenty of frying oil.
