Fried Rabbit

Ingredients
- 1 rabbit, cut into pieces
- Flour, as needed for breading
- 2 eggs
- Salt and pepper, to taste
- Frying oil
- 1 lemon (for serving)
- (Optional) Aromatic herbs such as rosemary or sage
Preparation
- Clean the rabbit pieces well and pat them dry with paper towels.
- In a bowl, beat the eggs with a pinch of salt and pepper.
- Pour some flour into a deep plate.
- Dip the rabbit pieces first in the beaten egg and then coat them in flour for breading.
- In a large pan, heat plenty of frying oil.
- Once the oil has reached the right temperature, fry the rabbit pieces until they are golden and crispy. This will take a few minutes per side.
- As the pieces are ready, transfer them to a plate lined with paper towels to remove excess oil.
- Serve the fried rabbit hot, garnished with lemon wedges and, if you wish, fresh aromatic herbs.
