Ingredients

Preparation

  1. Start by bringing a pot of salted water to a boil. Cook the paccheri in boiling water for about half the time indicated on the package, they should be al dente or even a bit less cooked, so that they can withstand the frying process without becoming too soft.
  2. Drain them well and rinse under cold water to stop the cooking process. Dry them carefully by blotting with a clean cloth or kitchen paper.
  3. Heat a good amount of seed oil in a suitable pot for frying or in a deep fryer.
  4. When the oil is hot, fry the paccheri a few at a time until they become golden and crispy, being careful not to burn them.
  5. As the paccheri are fried, transfer them to a plate lined with paper towels to remove excess oil.
  6. Season them, while they are still hot, with salt and, if you like, a sprinkling of black pepper or grated cheese.
  7. Serve the fried paccheri immediately to enjoy their crispiness. You can accompany them with a simple tomato sauce or with a condiment made of spreadable cheeses or sauces of your choice.
