Fried Green Beans

Ingredients
- 500 g of fresh green beans
- Flour as needed (about 100 g)
- Fine salt
- Black pepper (optional)
- Oil for frying (vegetable or olive for a more Italian version)
Preparation
- Clean the green beans by removing the ends and the side strings, then wash them under running water.
- Bring a pot of salted water to a boil and blanch the green beans for about 2-3 minutes. They should soften slightly, but still remain crunchy.
- Drain the green beans and quickly plunge them into cold water to stop the cooking process and preserve the vibrant color.
- Dry the green beans well with a clean cloth or paper towels.
- Flour the green beans: the ideal is to put the flour in a bag, add the green beans, and shake it so that they are evenly coated. Remove any excess flour.
- Heat a generous amount of oil in a frying pan or deep fryer to about 170-180 °C.
- Fry the floured green beans in hot oil until they become golden and crunchy. Do not overcrowd the pan, fry them in batches if necessary.
- Drain the fried green beans on paper towels to remove any excess oil.
- Season with a pinch of fine salt (and black pepper if you like) and serve immediately.
