Fried Doughnuts Filled with Chocolate Cream
17/11/2023The fried doughnuts filled with chocolate cream are a very indulgent dessert. Here’s the recipe to prepare them:
Ingredients
For the doughnut dough:
- 500 g of type 00 flour
- 100 g of sugar
- 2 eggs
- 100 g of soft butter
- 200 ml of lukewarm milk
- 12 g of fresh yeast
- 1 pinch of salt
- Grated zest of 1 lemon
- Oil for frying
For the chocolate cream:
- 250 ml of milk
- 3 egg yolks
- 70 g of sugar
- 25 g of type 00 flour or cornstarch
- 150 g of dark chocolate
- 1 sachet of vanillin or a teaspoon of vanilla extract

Begin by preparing the doughnut dough. Dissolve the fresh yeast in a glass of lukewarm milk. In a large bowl, place the flour and make a well in the center where you will add the eggs, soft butter, sugar, salt, and lemon zest. Start kneading by adding the milk with the dissolved yeast until you get a homogeneous mixture. Cover with a cloth and let it rise for about 2 hours in a warm place.

In the meantime, prepare the chocolate cream. Heat the milk in a saucepan until it just boils. In a separate bowl, whisk the egg yolks with sugar until the mixture is light and frothy, then add the sifted flour or starch and mix well. Slowly pour in the hot milk, stirring constantly to prevent lumps, and put the mixture back on the heat. Add the chocolate pieces and vanillin, and cook over low heat, stirring until the cream thickens. Let it cool.

Take the risen doughnut dough and roll it out on a floured surface to about 1 cm thick. Use a round cutter to cut out disks, then with a smaller one make the hole in the center.

Heat plenty of oil in a frying pan and fry the doughnuts a few at a time until they are golden. Drain them on paper towels and let them cool.

Once the doughnuts are cool, put the chocolate cream in a piping bag with a long and narrow nozzle and inject the cream into the doughnuts through the central hole, making sure to distribute it evenly.

Dust the doughnuts with powdered sugar before serving.
