Fried cod with avocado cream

Fried cod with avocado cream is a dish that combines the traditional flavor of fish with a touch of freshness and creaminess provided by the avocado. Here is how to prepare it:

Ingredients

For the fried cod:

  • 600 g of desalted cod
  • Flour as needed for breading
  • Oil for frying

For the avocado cream:

  • 2 ripe avocados
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 tablespoon of extra virgin olive oil
  • A pinch of chili pepper (optional)

Preparation

  1. Begin by preparing the cod. If the cod is already desalted, rinse it and dry it with paper towels. If it is whole, cut it into medium pieces to facilitate frying.

  2. Bread the cod pieces in flour, making sure to cover them evenly.

  3. Heat plenty of oil in a pan or a deep fryer. When the oil is hot (but not smoking), fry the cod pieces until they are golden and crispy. This usually takes about 3-4 minutes per side, depending on the thickness of the cod.

  4. Once fried, place the cod on paper towels to remove excess oil.

For the avocado cream:

  1. Peel the avocados and remove the pit. Place the pulp in a blender or in a container suitable for using an immersion blender.

  2. Add the lime juice, a pinch of salt and pepper, the extra virgin olive oil and, if you like a spicy touch, a pinch of chili pepper.

  3. Blend everything until you obtain a smooth and homogeneous cream. If necessary, you can adjust the salt and lime.

Serve the fried cod accompanied by the avocado cream; the contrast between the warm, crispy fish and the fresh cream will make the dish very pleasing to the palate.
